Recipe - Basic Pasta

December 18th, 2007

This is probably the most basic recipe I will ever post. Standard Egg Noodles. However, these are so easy to make and quicker than boiling store bought noodles. It takes around 10 minutes to make the pasta dough and 1-3 minutes to cook them. For store bought noodles, you are lucky to finish in 15 minutes, if you can get the water boiling in 5 minutes.

I use a Villaware V150 Imperia Noodle Machine for rolling out the pasta. You start with a small piece of pasta dough and crank it through the two rollers. The rollers are slowly clicked closer with each pass. When you reach your desired thickness, you either use the pasta sheet (ravioli, etc.) or run it through a noodle cutter. I love the fettuccine cut noodles in homemade chicken noodle soup.

Serves: 4

  • 3 eggs
  • 2 cups flour

Put in food processor with dough blades. Should ball up. If to dry, add water by teaspoon. (Usually not to wet, but if so add flour slowly).

Kneed by hand a little. Use pasta roller to make noodles or cut by hand.

Drop in boiling, salted water for 1-3 minutes.
