Recipe - Easy Corn Casserole

My sister brought this dish to dinner at my parents yesterday and it was a hit. Very quick and simple to fix, but yummy.

  • 1 can regular corn (don’t drain)
  • 1 can cream corn
  • 1 package Jiffy Corn Bread mix
  • 1/2 stick butter
  • 1/4 cup sugar (or eliminate if you think Jiffy is sweet enough)
  • 1 cup sour cream
  • 1 egg

Preheat oven at 350.

Melt butter in 6×9 pan. Double amounts for 13×9 pan.

Mix rest of ingredients and pour over butter in the pan.

Bake for 1 hour, it may not seem like it is set up, but it will gel as it cools.

Edit: I cut the butter down to 1/2 stick, instead of a stick.  It is still MORE than enough and half the fat.
