Recipe - Mom’s Hamburger Stew

I haven’t had this in quite a few years. It was a staple when we were growing up. I don’t think I would be exaggerating to say I’ve probably had over a hundred servings. I might have to make a batch for old time sake.
Serves: 10
- 2 pounds ground beef
- 1 onion, chopped
- 1 1/2 pounds frozen mixed vegetables (roughly)
- 1-2 potatoes, diced very fine
- 1 1/2 cups spaghetti sauce
- 2 teaspoons salt (or to taste)
- 2 onions, diced
Cook ground beef with onion; drain and reserve juice. Take fat off broth and add to beef. Add Mixed vegetables, potatoes, spaghetti sauce, salt, and onions to stock pot. Add water (or more beef broth or green bean juice, etc) to fill to top of ingredients. Boil, reduce heat and simmer.

I am making this much simpler these days. I get 3 bags of the soup mix that has potatoes already in it and add it to the ground beef and spaghetti sauce.
This makes it so fast. You have to add water to it to make it actually soupy. I sometimes add Spike too.
I can also use leftover spaghetti sauce and 1 bag of soup mix. I tend to always add an onion - oh, well, I will need to learn to cook differently when Amy is here.
