Recipe - Mom’s Wheat, Milk, and Sugar Free Chocolate Cake

My mom see recipes as suggestions. She will read various similar recipes, then throw them away and make something. Here is a good example of a recipe she came up with that eliminates some allergens those in my family had at one time.
Serves: 32
Cake
- 1 1/4 cups oat flour
- 1/3 cup baking cocoa
- 1 teaspoon baking soda
- 1 teaspoon salt
- 6 tablespoons butter
- 1 cup date sugar
- 1 cup water
- 1 tablespoon vinegar
- 1 teaspoon vanilla extract
- 1 teaspoon stevia
- 1 egg
Topping
- 1/3 cup boiled water
- 2/3 cup date sugar
- 1 tablespoon molasses
- 1/2 teaspoon stevia
- 7 tablespoons melted butter
- 1/2 cup coconut
- 1/2 cup chopped pecans
Cake
Preheat to 350 degrees. Boil water. Stir in date sugar, then add 1/2 teaspoon of stevia and vanilla. Stir in all the rest of the main ingredients. Butter pan and pour in 11×14 pan. Bake 20 minutes.
Topping
Mix water, date sugar, molasses, stevia and melted butter thoroughly. Blend in coconut and nuts and spread over cake.
Broil at 550 degrees 3″ from the heat 2 or 3 minutes, until golden brown.

Date sugar used to be readily available - I haven’t seen it lately in the stores. It is dried ground up dates.
When replacing sugar with date sugar I always packed the cup with it - and then added water into the cup to fill it.
Then I would add 1 teaspoon of Sweet Leaf Whole Leaf Stevia Concentrate. (It is brown - I like it much better than the clear stevia because I think it tastes more like sugar)
If I wanted to replace brown sugar, all I do is add 1 Tablespoon of molasses to the recipe.
Since date sugar is not as readily available, you could just pack a cup with regular dates, raisins, grated apples - something like that - and then add the stevia.

Reading back over that recipe - I think the 1 cup water that is mentioned might have been there when I wasn’t adding the water to the date sugar.
I would guess that this recipe was prior to the time when I realized that adding the water to the dates and letting them sit a while made the dish much sweeter.
Be sure to not overdo the water in this recipe.
