Recipe - Pecan Fingers
December 16th, 2007
I love these. They are like little pecan pies, with a sweet glaze. Kind of addicting, but what good desserts aren’t?
Serves: 32 (if you cut them into 32 bars and only eat 1… I’ll call it serves 16.)
1st layer
- 3/4 cup butter
- 3/4 cup confectioners’ sugar, sifted
- 1 1/2 cups flour (self rising can be used)
Cream butter and sugar. Blend in flour and press evenly in bottom of a 13×9x2 pan. Bake 12 to 15 minutes at 350 degrees.
2nd layer
- 2 eggs
- 1 cup brown sugar, dark
- 2 tablespoons flour
- 1/2 teaspoon baking powder
- 1/2 teaspoon salt
- 1/2 teaspoon vanilla extract
- 1 cup pecans, chopped
Mix well. Spread over hot baked layer and bake 20 minutes longer at 350 degrees.
3rd layer
- 1 1/2 cups confectioners’ sugar, sifted
- 2 tablespoons melted butter
- 2 tablespoons orange juice
- 1 teaspoon lemon juice
Mix thoroughly and spread on baked layer while still warm. Cool completely and cut.
